Restaurant Manager
The Restaurant Manager is responsible for leading the daily operations of MIKA Coral Gables, ensuring an exceptional guest experience while fostering a culture of teamwork, accountability, and excellence. This role oversees all front-of-house operations, supports back-of-house collaboration, develops team members, and drives financial performance while upholding the standards and philosophy of MIKA: "Great Hospitality, Every Time."
The Restaurant Manager leads by example, inspires the team, and ensures every guest leaves with a memorable dining experience that reflects the vision of Chef Michael White and the MIKA brand.
Essential Responsibilities
Leadership & Culture
- Lead, coach, and inspire the service team through active floor presence.
- Promote a positive, respectful, and hospitality-driven work environment.
- Foster teamwork and communication between Front of House and Back of House.
- Conduct daily pre-shift lineups, team meetings, and ongoing coaching sessions.
- Mentor supervisors and future leaders through continuous development.
- Maintain the highest standards of professionalism, appearance, and integrity.
Guest Experience
- Ensure every guest receives warm, personalized, and genuine hospitality.
- Resolve guest concerns quickly, professionally, and with confidence.
- Build relationships with regular guests and VIP clientele.
- Monitor dining room flow to maximize guest satisfaction.
- Support reservations, seating strategy, and service execution.
Operations
- Oversee all Front of House operations during service.
- Ensure all opening and closing procedures are completed accurately.
- Monitor cleanliness, organization, and maintenance throughout the restaurant.
- Maintain service standards, sequence of service, and dining room presentation.
- Ensure compliance with health, sanitation, and safety regulations.
- Enforce company policies and operating procedures consistently.
Team Development
- Recruit, interview, and participate in hiring Front of House team members.
- Train, coach, and evaluate employee performance.
- Conduct performance reviews and corrective action when necessary.
- Develop training plans to improve product knowledge and hospitality skills.
- Promote internal growth and succession planning.
Financial Performance
- Drive sales through hospitality, menu knowledge, and upselling.
- Manage labor costs while maintaining service excellence.
- Review daily sales, labor reports, and operational metrics.
- Assist in budgeting and forecasting.
- Monitor inventory, supplies, and operating expenses.
- Reduce waste while maintaining quality standards.
Beverage & Wine Program
- Support the execution of MIKA's wine and beverage program.
- Encourage responsible alcohol service.
- Promote food and wine pairing recommendations.
- Maintain beverage quality and presentation standards.
Administrative Responsibilities
- Create and manage staff schedules.
- Approve timecards and payroll edits.
- Complete daily manager logs and operational reports.
- Maintain employee documentation and compliance records.
- Coordinate with Human Resources regarding hiring, onboarding, and employee relations.
Qualifications
- Minimum 3–5 years of restaurant management experience in upscale or fine dining.
- Strong leadership and coaching skills.
- Excellent communication and interpersonal abilities.
- Extensive food, wine, and beverage knowledge.
- Experience managing labor, scheduling, and financial performance.
- Knowledge of POS systems (Toast preferred), reservation platforms (Resy/OpenTable), and Microsoft Office.
- Ability to thrive in a fast-paced environment while maintaining attention to detail.
- ServSafe Manager Certification (or ability to obtain).
- Wine knowledge and sommelier certification are considered a plus.
