AM Sous Chef

Salary: $75,000 annually
Schedule: Morning / Daytime (AM Prep Shift)
Position Overview
Mika, the refined Mediterranean restaurant by acclaimed chef Michael White, is seeking an experienced AM Sous Chef to lead and execute all prep operations for the restaurant. This role is critical to maintaining consistency, quality, and efficiency across all service periods by ensuring the kitchen is fully prepared and organized each day.
The AM Sous Chef will be responsible for managing prep production, supervising prep cooks, maintaining standards, and working closely with the Executive Chef and Chef de Cuisine to support service needs.
Key Responsibilities
Oversee and execute all daily prep production for the restaurant
Manage and lead the AM prep team, including scheduling, training, and accountability
Ensure all prep is completed accurately, efficiently, and to recipe specifications
Maintain the highest standards of food quality, freshness, and consistency
Coordinate prep priorities based on reservations, events, and service volume
Ensure proper labeling, storage, and rotation of all prepared items (FIFO)
Monitor food costs, minimize waste, and assist with inventory and ordering
Enforce all health, safety, and sanitation standards
Communicate effectively with PM kitchen leadership to ensure seamless service execution
Assist with menu development, testing, and special projects as needed
Qualifications
Minimum 3–5 years of experience in a professional kitchen, including sous chef or strong lead prep experience
Experience in high-volume, fine-dining or upscale Mediterranean/Italian kitchens preferred
Strong organizational and time-management skills
Proven ability to lead, train, and motivate a kitchen team
Solid understanding of classic techniques, prep systems, and kitchen logistics
Knowledge of food safety, sanitation, and proper kitchen procedures
Able to work early mornings, weekends, and holidays as required
