As a line cook at MIKA, you’ll help bring this elevated cuisine to life, working in a high-energy, high-standard environment.
Responsibilities
Prepare and execute dishes on the line in accordance with MIKA’s menu, recipes, plating standards and chef’s vision (including handmade pasta, grilled items, crudos, seafood, etc).
Work efficiently during service periods to ensure all dishes go out in a timely, high-quality manner.
Maintain cleanliness and organization of your station (mise en place, tools, cookware, line set-up, storage).
Follow recipes, portion controls, and plating guidelines exactly as specified by the Chef and Kitchen leadership.
Ensure proper temperature control, freshness, and quality of ingredients.
Assist with prepping ingredients, cleaning and stocking your station, and sometimes supporting other stations as needed.
Collaborate with kitchen team (expediter, sous-chef, other line cooks, dish team) to maintain smooth flow of service.
Follow all food safety, sanitation and hygiene standards (including internal standards, local health regulations).
Maintain a professional attitude, working under pressure, adapting to changes, and elevating the guest experience.
Communicate any issues (running out of ingredients, equipment failures, delays) promptly to kitchen leadership.
Participate in team-cleans, line checks, inventory counts and closing duties when required.
Qualifications
Previous experience (1-3 years or more preferred) as a line cook in a full-service restaurant, preferably fine dining or upscale casual with elevated cuisine.
Strong working knowledge of cooking techniques (grilling, sautéing, pasta making, seafood handling, crudos, plating).
Ability to work quickly, precisely, and under pressure during peak service.
Commitment to quality, consistency and attention to detail in food preparation and presentation.
Familiarity with kitchen safety, sanitation standards and proper food handling.
Ability to stand for long periods, lift up to ~50 lbs, work in hot environment, and work flexible hours including nights/weekends.
Team-oriented mindset, good communication skills, ability to follow instructions and take feedback.
Passion for Mediterranean and coastal cuisine, willingness to learn and embrace Chef White’s style and restaurant’s culture.
